This recipe will give you a beautiful roast chicken that is moist and delicious.
First things first, you have to let the chicken sit out for 4-6 hours. This will allow the chicken to come to room temperature (and allow it to cook evenly), but it will also dry the skin out. Dry skin will give you a beautiful crispy skin once roasted.
Use Salt, Pepper, Paprika, Lemons and Thyme to fill the entire cavity of the bird. Also cover the outside of the bird with Salt, Pepper, Paprika, and Thyme.
Truss the chicken as shown in the video. Roast for 20 mins per pound.
