It’s Spring… Finally!!! And as the seasons change so do our eating habits.  If you are like me you tend to make friends with salad, which is somewhat unappealing to me in the winter. I also shift to seasonal produce (cheaper, delicious and available).  However,
it depends on the person–some people eat more ice cream and others eat more salad.  I like to combine the two strategies.  For a lighter meal idea try the Ultimate Wedge Salad:
Ingredients
1 head iceberg lettuce, cut into quarters
Blue cheese dressing, as much or as little as you like
1 tomato, minced
1/4 red pepper
1 green onion, chopped
cubed cheese (any kind)
1 cup cooked bacon, chopped or crumbled
Directions
Place 1 wedge of lettuce turned on its side. Pour blue cheese dressing on wedge. Sprinkle with tomatoes, green onions, bacon, red peppers, cheese, and chopped or crumbled bacon. And enjoy guys!
